The first cold morning in November, someone in the house says it: "Gond ke laddoo bana lo." Then comes the argument about how much ghee, and whether last year's batch was chewy because of the gond or the flame. This gond ke laddoo recipe settles both, with exact amounts and the one step most recipes rush.
Quick Answer
Fry edible gond in hot ghee on a low flame until it puffs up white, then crush it. Roast whole wheat atta in ghee on low for 15 to 20 minutes until golden and nutty. Mix in the gond, nuts, coconut and cardamom, let it cool till just warm, add powdered jaggery or sugar, and shape. One batch of about 18 laddoo takes roughly 1 cup of ghee.
Ingredients
| Ingredient | Amount | Why it is here |
|---|---|---|
| Edible gond (gum) | ½ cup (about 60 g) | Puffs into light, crunchy bits; the signature of the laddoo. |
| Whole wheat atta | 2 cups (about 250 g) | The base. Coarse atta gives a better bite. |
| Ghee | About 1 cup (around 200 g), divided | For frying gond, roasting atta and binding. |
| Powdered jaggery or sugar (boora) | 1 to 1¼ cups (200 to 250 g) | Sweetness; jaggery gives a deeper colour. |
| Dry coconut, grated | ½ cup | Texture and fragrance. |
| Almonds and cashews, chopped | ½ cup | Crunch. |
| Cardamom powder | 1 tsp | Aroma. |
| Sonth (dry ginger powder), optional | ½ to 1 tsp | The traditional winter warmth. |
That cup of ghee is roughly half a 500 ml jar. If you are making two batches, one for home and one to send to family, a 1 litre jar is the easier buy.
How to Make Gond Ke Laddoo
- Puff the gond. Heat ¼ cup ghee in a kadhai on low-medium. Drop in a few pieces of gond at a time. Within seconds they swell and turn white, like popcorn. Lift them out, let them cool, and crush them lightly with a katori.
- Roast the nuts and coconut in the same ghee for a minute or two, until just fragrant. Take them out.
- Roast the atta. Add the remaining ghee, about ¾ cup, and the atta. Keep the flame low and stir without stopping for 15 to 20 minutes. It is done when it turns golden brown, smells nutty, and the ghee starts to separate at the edges. Do not hurry this.
- Switch off the flame. Stir in the crushed gond, nuts, coconut, cardamom and sonth.
- Let it cool till warm. Warm to the touch, not hot. Hot mixture melts the jaggery and turns sticky; cold mixture will not hold.
- Add the jaggery or sugar and mix well with your hands.
- Take a handful and press it firmly into a ball. If it crumbles, add a tablespoon or two of warm melted ghee and try again.
Why Your Gond Laddoo Go Wrong
- Chewy, sticky bits: the gond did not puff fully. The ghee was not hot enough, or too many pieces went in together.
- A raw, floury taste means the atta was under-roasted. Give it the full time on low heat.
- Laddoo will not bind. The mix has cooled too much, or needs a little more ghee. Warm it slightly and add ghee a spoon at a time.
- Burnt, bitter smell: the flame was too high while roasting atta. There is no fixing that batch. Start again on low.
Which Ghee Is Best for Gond Ke Laddoo?
Buffalo ghee is the traditional pick. It is denser and richer, and laddoo made with it set firm and hold their shape through a long winter. Cow ghee gives a lighter, more golden laddoo with a softer aroma. Both work. What does not work is a cheap "ghee" padded with vanaspati, which is how many shop-bought laddoo are made. Vanaspati is a source of industrial trans fat, which the WHO links to heart disease. If you are making them at home, use the real thing.

Storing Gond Laddoo
In an airtight steel or glass dabba, they keep for three to four weeks in winter at room temperature. No fridge needed; it only makes them hard. Use a dry hand when taking one out.
Be Realistic About Gond Laddoo
Gond laddoo are rich. Each one is mostly atta, ghee and sugar, and that is exactly why they are a winter treat and not a daily snack. One small laddoo a day, with milk, is the traditional amount. The ICMR-NIN Dietary Guidelines for Indians advise keeping both added sugar and visible fat in check, and a laddoo counts towards both.
You will also read that they cure back pain and joint pain. They do not. They are traditionally given to new mothers after delivery and to elders in winter as nourishing food. If you have diabetes, or have just had a baby, ask your doctor how they fit into your diet.
